A RECIPE + SPICES TO CREATE
Triple Onion Dip
1 tsp olive oil
1 small onion, diced
¼ tsp sugar (optional)
1½ cups sour cream
2 tbsp sweet + zesty onion mix
2 tbsp chives (or green onions), thinly sliced
1 bag kettle-cooked potato chips for serving
Set a large skillet over medium-low heat and add olive oil and diced onion. Sauté the onion until caramelized to a deep brown color (about 30-40 minutes on medium-low heat), adding sugar after about 20 minutes (if using). Remove the pan from the heat and allow the onion to cool to room temperature.
In a large bowl, combine the sour cream and onion mix and mix until well combined. Stir in the cooled caramelized onions. Chill the dip for at least 1 hour to allow onions to soften and flavors to meld.
Garnish the onion dip with chopped chives and serve with potato chips for dipping.
Expiry: 4-5 days
Adding sugar helps speed up the onion caramelization process. However, onions have natural sugars that break down when you caramelize them, so adding sugar is not necessary and totally optional.
For an even easier version of this cold onion dip, skip the caramelized onions. Simply mix the spice mix with the sour cream and chill for at least 1 hour.
