Lazy Man's Peach Cobbler
with Cinnasational Spice Blend

2 16oz jars sliced peaches in juice
½ cup (113g) unsalted butter
1 cup (120g) all purpose flour
1 cup (198g) granulated sugar
1 cup (227g) whole milk
1½ tsp baking powder
¼ tsp sea salt
½ tsp Cinnasational Spice Blend
directions

  • Preheat your oven to 350°F.

  • Add the butter to a 9x9 baking dish and place it in the oven until it has melted.
    While the butter is melting, strain the peaches, reserving the juice from one jar (about ½ cup). In a medium bowl, mix together the flour, sugar, baking powder, salt and Cinnasational Spice Blend. Pour the milk and juice from the peaches into the bowl with the dry ingredients. Mix just until combined.

  • Pour the batter directly into the hot pan, over the melted butter. Do not mix. Arrange the peach slices over the batter. Bake until the batter has risen around the peaches and the crust is thick and golden brown, about 1 hour. Serve with vanilla bean ice cream and enjoy!

tips
Fresh peaches (about 6) and white grape juice can be used in place of canned peaches.

The top of the cobbler may look a bit juicy but as long as the crust is a deep golden brown, the juice will congeal as it cools.
