Rose Cardamom Donuts

ingredients
FOR THE DONUTS
1¼ cup almond flour (fine)
½ tsp baking powder
¼ tsp baking soda
2 tbsp granulated sugar
1 pinch salt
1 tbsp cardamom, green pods (whole)
1 tbsp rose water
½ tsp vanilla extract
2 tbsp melted coconut oil
2 tbsp coconut milk
2 eggs
2 tbsp maple syrup
FOR THE ICING
1 cup confectioners' sugar
1 tsp hibiscus flower powder
2 tbsp milk
1 tsp rose water
FOR THE DECORATION
rose petals
crushed pistachios

  • Preheat the oven to 375°F.

  • In a mortar, gently crush the cardamom pods to release and extract the seeds. Then, ground the seeds with a pestle.

  • In a large bowl, combine all the dry ingredients and mix well.

  • Add the remaining ingredients to the dry mixture and stir until smooth.

  • Lightly grease the donut pan with coconut oil.

  • Evenly pour the mixture into the donut forms.

  • Bake for 12-14 minutes.

  • Allow the donuts to cool for 15 minutes on a cooling rack.

  • In a shallow bowl, prepare the icing by combining confectioners' sugar, hibiscus flower powder, milk, and rose water.

  • Dip one side of the cooled donuts into the icing and place them back on the cooking rack.

  • Sprinkle crushed pistachios and rose petals for decoration.

tips
You can substitute the cardamom green pods with cardamom seeds (ground). In this case use, 1/2 tsp. Freshly grounded cardamom is best though.
