Cardamom Spiced Champagne

FOR THE SIMPLE SYRUP
1 tbsp green cardamom pods, whole, lightly crushed
¼ cup sugar
¼ cup water
FOR THE COCKTAIL GLASS RIM
1 tbsp sugar
¼ tsp cardamom seeds, ground
½ tsp lemon zest
FOR THE COCKTAIL
¼ cup cardamom simple syrup
2 dashes orange bitters
1 tsp lemon juice (one squeeze)
6 oz champagne, prosecco, or sparkling wine of your choice

for the cardamom simple syrup:
In a small saucepan, add 1/4 cups of water and 1/4 cups of sugar. Heat on medium until the sugar is completely dissolved. Add the crushed Cardamom Pods and let the sugar steep for 20 minutes in the refrigerator.

for the cocktail glass rim:
On a small saucer add 1 tbs sugar, 1/4 tsp cardamom, 1/4 tsp of lemon zest. Next, in a chilled champagne glass, coup glass or wine glass, rub the rim with a lemon and dip the rim in a bowl with sugar, cardamom spice, and lemon zest.

for the cocktail:
Add the cardamom simple syrup, then 2 dashes of bitters, 1 tsp lemon juice (1 squeeze) and top it off with chilled Champagne/prosecco/or sparkling wine of your choice.

Drink should be enjoyed immediately after preparation. The simple syrup can be stored for 1 week if refrigerated.
tips
Make sure you sugar the rim before you make the drink.

The simple syrup can be made a day ahead. It can also be added to coffee or tea for a deliciously sweet cardamom flavor.
