FOR THE CHAI SYRUP
5 green cardamom pods, whole, lightly crushed
2 black peppercorns, whole
1 tsp fennel seed, whole
3 cups sugar

2 oz cognac (recommended: Rémy Martin 1738)
1 oz chai syrup
3 drops cardamom bitters (such as King Floyd's)
1 pasteurized egg, whole

This flavorful cocktail is a twist on the classic brandy “flip,” a type of drink that includes a whole egg. It is typically served in a smaller variety of martini or coupe glass affectionally known as a Nick and Nora glass, named in honor of the fictional 1930s-era husband and wife sleuths, Nick and Nora Charles.

Heat the spices in a dry saucepan over medium-low heat until aromatic, about 1 minute. Add the boiling water and black tea; stir. Remove from heat and allow to steep for 5 minutes. Strain, reserving the liquid in a clean saucepan. Reheat the infused tea just to the boil. Stir in sugar. Simmer for 3-5 minutes until syrup begins to thicken. Remove from heat and let cool. Refrigerate any unused portion for up to two weeks.

Place all ingredients in a shaker filled with ice. Strain into a glass.

If you don’t have Nick and Nora or martini glassware, any glass with a 5-to-6-ounce capacity will do.
