Gingerbread Muffins

1 cup all-purpose flour
½ cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground clove
¼ tsp salt
½ cup Greek yogurt, plain
2 eggs
⅓ cup unfiltered blackstrap molasses
1 tbsp 100% pure maple syrup
2 tbsp coconut oil, melted
2 tsp vanilla extract
½ cup plain unsweetened almond milk, (or any preferred milk)
Mediterranean Sea Salt Flakes or turbinado sugar (optional for topping muffins)

  • Preheat oven to 350 degrees Fahrenheit and line a muffin tray with 10 non-stick muffin liners.

  • In a large bowl, combine both flours, baking powder, baking soda, ginger, cinnamon, nutmeg, clove, and salt.

  • In a medium bowl, combine yogurt, eggs, molasses, maple syrup, coconut oil, vanilla, and almond milk.
    Pour wet ingredients into the flour mixture and stir until just combined.

  • Use a cookie scoop and fill each muffin liner to the brim with batter.

  • Bake in the oven for 17-18 minutes or until a toothpick comes out clean when inserted in the middle of the muffins.
