1 red bell pepper, diced

a little bit about the recipe
Like the warm sunshine, taste summer in every bite with my favorite Mango Salsa with Pineapple Al Pastor Chile Blend. It combines the sweetness of ripe mangoes with the smoky, spicy flavors of the Al Pastor blend. Enhanced by fresh cilantro, lime juice, and a touch of red onion, this vibrant salsa is perfect for pairing with tortilla chips or as a zesty topping for grilled chicken, fish, or tacos. The optional addition of jalapeño adds a hint of extra heat, making it a versatile and refreshing dish suitable for any summer gathering.

What I love about this salsa is how it embodies the best of summer flavors—fresh, bright, with the perfect amount of spice. I love making this salsa when having a barbecue with friends. It's a favorite every single time. It pairs so well with meat or fish, but can also be enjoyed by the spoonful straight out of the bowl.

    Prepare the Ingredients:
  • Peel, pit, and dice the mangoes into small cubes.
    Finely chop the red onion.

  • Dice the red bell pepper.

  • Seed and finely chop the jalapeño, if using.

  • Chop the fresh cilantro.

  • Juice the limes.

    Combine the Ingredients:
  • In a large bowl, combine the diced mangoes, chopped red onion, diced red bell pepper, chopped jalapeño, and chopped cilantro.

    Add the Seasoning:
  • Sprinkle the Pineapple Al Pastor chile blend over the mango mixture.

  • Pour the lime juice over the mixture.

    Mix the Salsa:
  • Gently toss all the ingredients together until well combined. Make sure the spices and lime juice are evenly distributed throughout the salsa.

    Taste and Adjust:
  • Taste the salsa and adjust the seasoning if necessary. Add more Pineapple Al Pastor chile blend or lime juice to suit your preference.

    Chill and Serve:
  • For the best flavor, cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld.

  • Serve chilled with tortilla chips, or use as a topping for grilled chicken, fish, or tacos.

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Make Ahead: This salsa can be made a day in advance and stored in the refrigerator. The flavors will develop more over time.

Feel free to add other fruits like pineapple or avocado for a unique twist.
