SPECIAL EQUIPMENT:
FINE MESH STRAINER
Place water and sugars into a small saucepan and heat over medium-high heat. Stir to dissolve sugars, then boil for a few minutes more until syrup thickens slightly.
Reduce heat to a simmer and add pumpkin puree, vanilla extract, and spices. Stir while mixture simmers another 4-5 minutes. Remove from heat and let cool a bit before pouring into a jar or a serving vessel.
For an ultra-smooth texture, strain through a fine mesh sieve prior to cooling.
To adjust viscosity, simmer for a few additional minutes to thicken. Or alternatively, add water to make it more pourable. An ideal consistency is one similar to that of high-grade maple syrup.
seasonal blend
Special beyond the seasonal fervor, pumpkin pie spice delivers all the aromas and flavors of a kitchen filled with fresh baked goods. It's autumn in jar.
