Apple Ginger Fizz with Bourbon and Apricot

Sometimes we crave the taste of hot cider but want something cold and refreshing. This version gets a twist from a shot of cold ginger ale and is served over ice.

Combine the apple juice, bourbon, mulling spice, crystallized ginger, and chopped apricot in a large microwave safe mug. Microwave for 1 ½ minutes. Strain off the liquid into a mug or heat-proof glass. Let cool for 5 minutes. Top off with a splash of cold ginger ale. Add ice, if you wish.
