Introducing my Cacao-Maple Mélange, a spice blend born from the crossroads of my Swiss heritage and Canadian home. Inspired by the breathtaking Swiss Alps and the maple-laden landscapes of Canada, Cacao-Maple Mélange is a celebration of two distinct cultures united in a single spice blend. The visual allure of the mix is its rich chocolatey hue that is intertwined with hints of warm cinnamon and golden maple. The aroma of this blend is where the magic lies. It is warm and cozy and will transport you to a chalet nestled in the mountains. The sweet embrace of maple mingles with the warm spiciness of cloves and cinnamon, creating an aromatic journey that captivates the senses. When tasted, the blend unfolds like a story – the deep, robust cacao notes balance harmoniously with the sweet warmth of maple sugar and cinnamon, while the subtle and delicate citrusy zing of orange and cardamom adds a refreshing twist. Cinnamon is the star of the show but nutmeg, allspice and cloves pack their own punch creating a well rounded spice mix. From cinnamon rolls to cobbler, this blend is the perfect addition to any and every baking recipe! A few of my favorite ways to use the Cinnasational Spice Blend: • Swap out the cinnamon for this blend in your next batch snickerdoodles • Spice up your favorite banana bread by adding 1 ½ teaspoons to recipe • Add a couple of teaspoons to your next summer crisp or cobbler Tips: Whisk this blend in with the flour and other dry ingredients when adding it to a recipe so it is evenly distributed. To make a spiced simple syrup, mix it in with the sugar before adding the water so it does not separate.

    Five Pepper Cacao Rub is the key ingredient to mouthwatering barbecue ribs and the perfect steak tacos. The cacao doesn’t yield an obvious chocolate flavor, but instead brings depth, complexity and a subtle earthiness to the blend. The richness of the cacao is balanced by five types of ground chile peppers, ranging from sweet and fruity to sharp and smoky. This versatile spice blend is moderately spicy and can be used to add bold flavor to pork, beef, lamb, chicken and even fish.
      How To Use
    • Replace your chili powder with this blend to create a hearty and flavorful bowl of beef chili.

    Sweet + Savory Blend

    When creating this spice blend, I was inspired by my childhood growing up in a West Indian household, which is why it’s named Harvest Spice; for the cozy feeling of home and nostalgia the aroma of this blend invokes. The spices I used for this blend were all part of the dishes we enjoyed, especially during the holidays when the sweet scent of cinnamon, warm clove, citrusy cardamom, aromatic nutmeg, and peppery allspice permeated the air. I wanted this blend to pull double duty in the kitchen, so I added earthy coriander and the subdued bite of white pepper to bridge the gap between sweet and savory. This incredibly versatile spice blend has limitless uses:
  • Breakfast recipes such as French toast or baked oatmeal
  • Baked goods such as pies, cakes, and cookies
  • Meat and poultry dishes, like Moroccan-inspired stews
  • Tips:
  • Add Harvest Spice to dry ingredients for sweet treats, then follow the recipe as instructed.
  • When preparing your savory dishes, add the spices after the aromatics have softened and sautee briefly to avoid burning. This method allows the flavors to bloom and be efficiently distributed throughout the dish.

    Flavors of Spain & Portugal

    Let's travel to the Iberian peninsula of Spain and Portugal with this super versatile rich and smoky Iberian Infusion blend! This paprika-forward blend is well-rounded with smoky, sweet and flavorful chile notes, paired with alliaceous spices for a more complete blend. I’ve added some brightness with sumac and oregano, and warmth from cinnamon and cacao.  The perfect blend for appetizers, mains and snacks:
  • Cook into stews or use as a rub for meats or on seafood!
  • Infuse into sauces or dips or dust snacks like popcorn or salted chips!
  • Coat vegetables before roasting or use as a base for rice dishes (like Paella)!
  • Tips:
  • Stovetop cooking: adding the blend to oil helps dissolve the pigment and flavor compounds, while intensifying the flavors. Add it closer to the beginning to allow the color and flavor to permeate the final dish better.
  • CAUTION: Do not burn/scorch - it can become very bitter. Add sugar to the dish for more sweetness and to balance out smokiness.
  • Salt your dishes well: this blend contains no salt, allowing you to add that umami using other ingredients (salt, broth, mushrooms, etc.,). It’s also versatile enough to add to already-salted snacks, like chips, popcorn or olives.

    Kerala Curry Masala is an aromatic blend of 5 inevitable spices in Kerala cooking. This spice blend gives the depth and flavor to majority of the dishes. This is a staple blend of spices needed in a Kerala kitchen. The freshly roasted spices, when ground to a coarse powder, is then added to many dishes including vegetarian or non-vegetarian to impart the perfect aromatic touch and to elevate the flavors to another level. A hint of sweetness from mango juice powder, the tang of hibiscus, the mild spiciness of guajillo chilies, the earthiness of cumin, and a hint of exotic je ne sais quoi from coriander and allspice make this blend sing.     I have created a culinary blend with Selefina Spices that encompasses my everyday favorite cooking spices! Whether I’m making chicken cutlets, pork chops, or even pan-seared salmon, this blend is what I use for a well seasoned and balanced flavor every time! There’s two kinds of paprika to add color and depth to your dish, as well as garlic, onion, and parsley to compliment the smokey undertones of this blend. There is a small amount of Himalayan salt to round out the flavor. I made sure to add little of it so you are can feel free to add more if you’d like! Everyone salts their dishes differently which makes this spice blend super customizable! This spice blend works well for other savory options like roasted potatoes or steamed veggies! I wanted to make a versatile spice blend that could be used for everyday dinners and would help speed up the cooking process! All you need is to just add a couple tablespoons to your protein or vegetables and pair with a carb of your choice for a flavorful yet satisfying meal!

    A Savory Blend

    Modeled after my favorite pastimes, baking and eating bread, I created a savory blend of my favorite dipping spices. Pair with your favorite olive oil and loaf of crusty, rustic bread. The blend has the usual spices you’d pair with bread: garlic, oregano and thyme. But also a few unexpected additions. Marjoram for a hint of sweetness and mild crushed red pepper for a little heat. A pinch of flaky sea salt really rounds out the blend, but isn’t so overpowering so you’re still free to adjust the salt on your own. Rustic Dipping Spice is colorful and has larger pieces of the included spices; it’s meant to be an addition to your dish that you can see to enjoy. Start by adding one teaspoon per ¼ cup olive oil and adjust up from there for a more intense flavor. Consider infusing the Rustic Dipping Spice in your oil for an extra burst of flavor. The Rustic Dipping Spice is also a fabulous addition to bread or pizza dough. Add it with the flour and it gives a wonderful rich flavor to your baked goods. You can also sprinkle the blend on unbaked bread as a topping. And in a pinch, the Rustic Dipping Spice pairs well with roasted vegetables or proteins as it lends itself to being very versatile in your kitchen! Note that additional salt and pepper will need to be added when using it for vegetables or proteins.

    I did not grow up baking, nor was I exposed to baking spices beyond cinnamon. As I started my baking journey as an adult, I steered clear of unfamiliar spices – sticking to that cinnamon, with the occasional foray into nutmeg and cloves. Along the way I discovered what would quickly become my most loved and used spices – cardamom and ginger – along with the beautiful lift that a bit of salt gives to a sweeter recipe. This blend reflects how I bake today, and I hope you enjoy it as much as I do!

    When Selefina asked me to collaborate with them on a spice blend, I immediately thought of garlic and onion. I season basically everything with garlic and always add extra onion too! These two ingredients pack so much flavor-- pungent, but also a little sweet, with tons of umami. Sweet + Zesty Onion Mix was inspired by an onion soup mix, full of bold onion and garlic flavor. I’ve added two types of paprika and sriracha salt for depth of flavor and just a hint of spice. This savory all-purpose seasoning can be used anywhere you’d use garlic and/or onion powder. Usage ideas: • creamy soups, sauces, and dips • chili (or other hearty stews) • marinade for chicken (or other protein) Usage tip: This spice mix is best when added to a liquid, to soften up the dried onion and garlic pieces. Think soups, sauces, dips, marinades, etc.
