5 oz (about 1 1/4 cup) crushed Speculoos (or graham crackers)
1 tbsp brown sugar
¼ tsp kosher salt

16 oz full-fat cream cheese, room temperature
½ cup granulated sugar
1 tbsp all purpose flour
1½ tsp ground cinnamon
½ tsp ground ginger
½ tsp ground cardamom
¼ tsp ground cloves
⅛ tsp ground allspice
¼ cup sour cream, room temperature
1 tsp vanilla extract
2 large eggs

These chai spiced mini cheesecakes deliver rich, cozy flavor in every bite. A crisp spiced cookie crust pairs with a smooth cream cheese filling, gently spiced with cinnamon, ginger, and cardamom—just like your favorite chai.

  • Preheat the oven to 320°F and line a standard muffin tin with 12 liners.

  • Prepare the crust
  • In a medium bowl, mix the crushed cookies, brown sugar, salt, and melted butter until fully combined.

  • Evenly divide the mixture among the liners, pressing firmly with a spoon to form the crust.

  • Bake for 5 minutes, then let cool while preparing the filling.

  • Make the cheesecake filling
  • In a large bowl, beat the cream cheese, sugar, flour, cinnamon, ginger, cardamom, cloves and allspice until smooth and creamy.

  • Add the sour cream and vanilla, mixing on low speed until fully combined.

  • With the mixer still on low speed, add the eggs one at a time, mixing each just until fully incorporated.

  • Divide the batter evenly over the cooled crusts and bake for 18–20 minutes, until the edges are set but the centers still jiggle slightly.

  • Remove from the oven and let cool at room temperature for 1 hour. Transfer to the refrigerator and chill for at least 3 hours before serving.

Store in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 2 months.
tips
For an ultra smooth cheesecake filling, make sure your ingredients are at room temperature and mix the cream cheese, sugar and spices until completely lump-free.
