1 tsp baking soda
1 tsp kosher salt
⅓ cup heavy whipping cream
⅓ cup unsulphured molasses
¾ cup (150 grams) granulated sugar
1 tbsp ground cinnamon
1 tbsp ground ginger
½ tbsp ground cardamom
½ tbsp ground cloves
½ cup unsalted butter, cubed at room temperature
royal icing for decorating, optional

For a gingerbread cookie with snap and charm, try Swedish Pepparkakor! Thin, crisp, and perfectly spiced, these holiday classics balance warm cinnamon and ginger with a hint of cardamom—ideal for decorating or enjoying with coffee.

  • 1.In a medium bowl, whisk together the flour, baking soda and salt. Set aside.

  • In a large saucepan, combine the heavy cream, molasses, sugar, cinnamon, ginger, cardamom and cloves. Bring to a boil over medium heat, stirring occasionally. Once the mixture comes to a simmer and the sugar has fully dissolved, remove from heat.

  • Stir in the butter until completely melted. Gently fold in the flour mixture until just combined.

  • Shape the dough into a disc, wrap tightly in plastic wrap, and refrigerate overnight (or at least 8 hours).

  • Before rolling, let the dough sit at room temperature for about 1 hour until slightly softened.

  • Preheat oven to 375°F and line several baking sheets with parchment paper.

  • On a lightly floured surface, roll the dough to 1/8" thickness. Cut out shapes and transfer to the prepared baking sheets, spacing the cookies about 1 inch apart.

  • Bake for about 8 minutes. The cookies are done when the edges are set and the centers look matte (not wet or shiny). Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Decorate with royal icing if desired.
