- 1.In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
- In a large saucepan, combine the heavy cream, molasses, sugar, cinnamon, ginger, cardamom and cloves. Bring to a boil over medium heat, stirring occasionally. Once the mixture comes to a simmer and the sugar has fully dissolved, remove from heat.
- Stir in the butter until completely melted. Gently fold in the flour mixture until just combined.
- Shape the dough into a disc, wrap tightly in plastic wrap, and refrigerate overnight (or at least 8 hours).
- Before rolling, let the dough sit at room temperature for about 1 hour until slightly softened.
- Preheat oven to 375°F and line several baking sheets with parchment paper.
- On a lightly floured surface, roll the dough to 1/8" thickness. Cut out shapes and transfer to the prepared baking sheets, spacing the cookies about 1 inch apart.
- Bake for about 8 minutes. The cookies are done when the edges are set and the centers look matte (not wet or shiny). Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Decorate with royal icing if desired.
Undecorated cookies can be stored in an airtight container at room temperature for up to 1 week or in the freezer for up to 3 months.
