Carrot Halwa/Gajar Ka Halwa is a must try North Indian dessert made with fresh grated winter carrots. The grated carrots are slowly cooked in milk to get the perfect fudgy delectable texture. The Carrot Halwa is flavored with aromatic cardamom powder and ghee to enhance the carrot and milk flavors. This mouth watering dessert is finally garnished with pistachio slices and rose petals to give that appeasing festival-worthy look.

    Khoya Preparation:
  • Warm a non stick pan and melt ghee. Add 1/4 cup milk and simmer it. Lower the flame and add the milk powder and mix well till there are no lumps. Keep stirring on low heat till all the milk is evaporated and the milk powder comes together as a smooth dough. Turn off the flame and let it cool for 10 minutes. Crumble them using the fingers.

    Carrot Halwa Preparation:
  • Remove the skin of the cardamom and ground the seeds into a powder using a motor & pestle.

  • Melt 1 tsp of ghee in a heavy bottom pan. Add the grated carrots and cook on medium heat for 5 minutes.

  • Add the sugar and cook for another 3 minutes till the carrots are slightly cooked and releases some juice.

  • Add milk and keep stirring till all the milk is evaporated and the carrots come together as a fudgy dough. It will take around 40 minutes.

  • Add 2 tsp of ghee and cardamom powder and mix well. Turn off the flame.

  • Gently fold in the khoya. Cover and cool in the refrigerator for 4 hours.

  • Garnish with pistachio slices and rose petals before serving.

The carrot halwa can be stored in airtight container in the refrigerator for 1 week.
tips
Make sure to cook the Carrot Halwa on low to medium heat by continuously stirring.
Adjust the quantity of sugar in the recipe per the sweetness of the carrot. Winter carrots are usually sweet and needs only less sugar for this recipe.
