Cheesy Pull-Apart Bread

with Paprika and Herbs

FOR THE DOUGH:
3½ cups all-purpose flour
2 tbsp granulated sugar
2 tsp instant yeast
1½ tsp salt
1 cup warm milk
¼ cup warm water
¼ cup unsalted butter, melted
1 large egg
FOR THE FILLING:
1½ cups shredded cheese (cheddar, mozzarella, or a blend)
2 tbsp unsalted butter, melted
1 tsp smoked Spanish paprika
1 tsp Italian seasoning, classic
2 cloves garlic, minced
salt and pepper to taste
fresh parsley, chopped (optional, for garnish)

a little bit about the recipe
I love having a handful of recipes for versatile sides that go with a large variety of meals. From delicious summer BBQs to autumn stews, this cheesy pull-apart bread checks all the boxes. Featuring layers of dough discs brushed with a paprika-herb butter and sprinkled with cheese it's one of my top add-ons for my family suppers. Baked to golden perfection, it offers a flavorful, interactive, and irresistible treat ideal for sharing and loved by all.

    Prepare the Dough:
  • Activate Yeast: In a small bowl, combine the warm water and sugar, and sprinkle the yeast on top. Let it sit for 5-10 minutes until it becomes frothy.

  • Mix Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and add the warm milk, melted butter, egg, and the yeast mixture. Mix until the dough comes together.

  • Knead Dough: Turn the dough onto a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic. You can also use a stand mixer with a dough hook attachment for this step.

  • First Rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.


  • Prepare the Filling:
  • Mix Filling: In a small bowl, combine the melted butter, minced garlic, paprika, Italian seasoning, salt, and pepper.


  • Assemble the Bread:
  • Roll and Cut Dough: Once the dough has risen, punch it down and turn it onto a lightly floured surface. Take golfball sized pieces and roll them out into larger discs about 1/4 inch thick (don't worry about being exact there is no need for perfection here).

  • Layer the Filling: Brush each disc with the butter mixture and sprinkle with cheese. Stack the discs in piles of 4-5 discs each.

  • Place in Pan: Grease a loaf pan. Lay the stacks of discs horizontally into the loaf pan, arranging them side by side until the pan is filled. It’s okay if it looks a bit messy – it will bake beautifully.


  • Second Rise:
  • Second Rise: Cover the pan with a towel and let the dough rise for another 30-45 minutes until it has puffed up.


  • Bake the Bread:
  • Preheat Oven: Preheat your oven to 350°F (175°C).

  • Bake: Bake the bread for 30-35 minutes, or until it is golden brown and cooked through. If it starts browning too quickly, you can cover it loosely with aluminum foil.

  • Cool and Serve: Let the bread cool in the pan for about 10 minutes before removing it. Garnish with fresh parsley if desired. Serve warm, and enjoy the cheesy, herby goodness!

Store the bread in an airtight container or a resealable plastic bag at room temperature for up to 2 days.
tips
To help with the rising of the dough, place your bowl in the oven (while off) and turn the oven light on. The warmth from the light will help speed up the rise especially if the ambient temperature in your home is cool.
