1½ pounds boneless, skinless chicken thighs, cut into 1-inch chunks
2 tbsp soy sauce
2 tbsp brown sugar
2 tbsp fish sauce
1 tbsp lime juice
1½ tbsp Balinese Fusion Zest (Herman at Home spice blend)
¼ cup coconut milk
⅛ tsp salt
10 bamboo skewers
Fried shallots for garnish
FOR THE PEANUT SAUCE
3 tbsp peanut butter
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp hoisin sauce
2 tsp chili garlic sauce
¼ cup boiling water

If you like big and bold flavors, you have to try my recipe for Chicken Satay with Peanut Sauce! Using my Balinese Fusion Zest spice blend, you get so much flavor all in one jar because it contains 10 spices including ground galangal, turmeric, coriander and more! These delicious skewers are quick to make and will be your next go-to recipe for any meal!

  • Soak bamboo skewers in water for 10-15 mins

  • In a bowl, add chicken thighs, soy sauce, brown sugar, fish sauce, lime juice, Balinese Fusion Zest spice blend, coconut milk, and salt and marinade for at least 30 mins.

  • Skew each piece of chicken thigh with a bamboo skewer without overcrowding. Make sure there are no hanging pieces and ensure chicken thighs are flat.

  • Preheat air fryer for a few mins at 425F. Add chicken skewers without overcrowding (separate into batches if needed), then cook for 11-13 mins until browned and cooked through.

  • While chicken is air frying, add peanut butter, soy sauce, lime juice, hoisin sauce, chili garlic sauce and water to a bowl. Microwave for 30 seconds then whisk together to combine.

  • When chicken is done, serve with peanut sauce and fried shallots on top.
