- Soak bamboo skewers in water for 10-15 mins
- In a bowl, add chicken thighs, soy sauce, brown sugar, fish sauce, lime juice, Balinese Fusion Zest spice blend, coconut milk, and salt and marinade for at least 30 mins.
- Skew each piece of chicken thigh with a bamboo skewer without overcrowding. Make sure there are no hanging pieces and ensure chicken thighs are flat.
- Preheat air fryer for a few mins at 425F. Add chicken skewers without overcrowding (separate into batches if needed), then cook for 11-13 mins until browned and cooked through.
- While chicken is air frying, add peanut butter, soy sauce, lime juice, hoisin sauce, chili garlic sauce and water to a bowl. Microwave for 30 seconds then whisk together to combine.
- When chicken is done, serve with peanut sauce and fried shallots on top.
