I’ve made a lot of potato salads over the years, but this one has quickly become a favorite in our house. It’s creamy, cozy, and packed with flavor—but what really makes it pop is the Dill-icious Ranch Seasoning. That mix of dill, garlic, chives, and lemon gives it the perfect herby kick without having to measure out a million spices. I love how it turns something simple into a dish that feels a little special. It’s easy to throw together, super versatile, and always a hit whether I’m serving it at a summer BBQ or just alongside lunch at home.

Cook the potatoes:
- Place the cut potatoes in a large pot of cold water with 1 tsp salt.
- Bring to a boil and simmer until just fork-tender, about 10–15 minutes.

Make the creamy dressing:
- In a large bowl, whisk together the sour cream, mayo, vinegar, Dill-icious Ranch Seasoning blend, Dijon, salt, and pepper until smooth.
Combine:
- Add the cooled potatoes, celery, red onion, chives (if using), and chopped eggs to the dressing.
- Gently toss until evenly coated. Taste and adjust seasoning as needed.
Chill and serve:
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve cold, garnished with extra chives or a sprinkle of the blend.
Store any leftovers in an airtight container in the fridge for up to 3 to 4 days. Give it a quick stir before serving—flavors tend to deepen over time!
For the best texture, let the potatoes cool slightly before mixing them with the dressing—this keeps them from getting too soft or mushy.
Try topping it off! Just before serving, add a sprinkle of crispy fried onions, chopped pickles, or even crumbled bacon for extra texture and a boost of flavor.
