  • Pre-heat the oven to 350 degrees; line 2 sheet pans with parchment paper.

  • Using a stand or hand mixer, beat both sugars and the oil till well combined. Add the egg and vanilla and beat again.

  • Add the flour, baking powder, salt, cinnamon and paprika and beat till just combined. Use a rubber spatula to fold in the chopped chocolate.

  • Use a cookie scoop to scoop the dough onto your prepared sheet pans. Bake the cookies for 10-12 minutes, or till golden brown around the edges. Transfer to a wire rack to cool completely.

Cookies will keep at room temperature in an airtight container for 3 - 5 days, or for several months frozen.
tips
Chopped chocolate results in pools of melty chocolate throughout your cookie, versus chocolate chips which retain their shape after baking. If you prefer chocolate chips or that's what you have on-hand, swap the chocolate called for in the recipe for 1/2 cup of chocolate chips.

Add a pinch of flaky sea salt to the tops of the unbaked cookies for a more sweet-salty-spicy flavor!
