Chocolate Sumac Chickpea Brownies

1 can chickpeas, drained and rinsed
½ cup peanut butter (creamy and salted, if not using salted peanut butter, add ¼ teaspoon salt)
½ cup 100% pure maple syrup
2 tsp vanilla extract or vanilla extract powder
2 tbsp olive oil
2 tsp ground sumac
¼ cup cacao powder
1 tsp baking powder
½ tsp baking soda
¼ cup gluten-free 1:1 baking flour
½ cup chocolate chips (use vegan + gf if needed)

These Sumac Brownies are a healthier twist on classic brownies! They’re gluten-free, vegan, lower in sugar than a typical brownie, and whole family-approved! The Sumac's citrusy, fruity aroma elevates the rich chocolate flavor of the brownies perfectly.

  • Preheat oven to 350 degrees Fahrenheit. Spray an 8x8 baking dish with avocado oil spray (or vegetable oil of choice).

  • In a food processor, blend chickpeas, peanut butter, maple syrup, vanilla, and olive oil until smooth.

  • Add ground sumac, cacao powder, baking powder, baking soda, and gluten-free flour to the food processor and blend until mixed well.

  • Carefully remove the food processor blade and add the chocolate chips. Mix them into the brownie batter with a spoon.

  • Pour the brownie batter into the baking dish, spreading and smoothing the batter out so it reaches all sides of the baking dish.

  • Top with more chocolate chips if desired. Bake in the oven for approximately 20 minutes, or until a toothpick comes out clean when inserted into the brownies.

  • Allow brownies to cool before slicing into them and then enjoy!

Store brownies in an airtight container in the fridge for up to 3 days. You can warm them up in the microwave slightly before eating them, if desired, but you may need to eat them with a fork!
tips
Wait for about 10 minutes or so before slicing into the cooked brownies so that they are easier to cut.

Top brownies with flaky sea salt for a sweet and salty flavor!
