Add all ingredients in a small saucepan and whisk to combine. Gently heat to just below boil, whisking often, then simmer for about 2 minutes or until cacao powder and vanilla extract have completely dissolved. Pour into a mug and serve.
tips
Serve with whipped cream, cacao nibs, or dried coconut shavings, if desired.

Cooking coconut milk for prolonged periods and/or at high temperatures can cause curdling. Be mindful of your settings and watch your mixture.
