ingredients
FOR THE SQUARES
3 cups Medjool dates, pitted
½ cup almonds
½ cup cashews
½ cup pistachios
½ cup pecans
½ cup coconut flakes, unsweetened
1 tbsp dried rose petals
6 green cardamom pods, whole
1 tsp ghee/butter
FOR THE TOPPINGS
1 tbsp pistachio slices
½ tbsp dried rose petals

These Dates and Nut Squares studded with beautiful rose petals are not only eye catching sweet treats, but are also a delicious and healthy, refined sugar free treat that has a prefect note of cardamom flavor.

  • Dry roast the nuts in a pan on slow heat for 5 minutes and transfer to a bowl to cool down for 10 minutes.

  • Remove the skin of the cardamom pods and ground the seeds into a powder.
    Once the roasted nuts cools down, pulse them with the coconut flakes in a food processor to get a coarse mix.

  • Add the pitted dates and pulse till everything looks like a coarse mix.

  • Heat a pan and melt the ghee/butter. Add the mix into the melted ghee/butter and cook on low heat for 5 minutes till the dates starts to soften. Add the cardamom powder.

  • Transfer the mix to a 8" x 8" square pan lined with parchment paper. Press the mix well and let it cool at room temperature for 2 hrs. Cut them into squares. Garnish with pistachio slices and rose petals.

  • expiry:
    These Dates and Nuts squares can be stored in air tight container at room temperature for 1 week. If refrigerated in air tight containers, it can stay fresh up to 2 weeks.
    tips
    Use a mortar and pestle to grind the cardamom seeds. Alternatively you can use SELEFINA ground cardamom seeds.
