- Hard boil the eggs (12-15 min) and let them cool off completely, then chop them up. Dice the ham and chop up fresh dill.
- Place in a bowl along with the mustard, mayo, salt and pepper and paprika - all to taste and mix well.
- Spoon the egg salad over the pita crackers and sprinkle with additional paprika. Garnish with fresh chives.
Expiry: Best if consumed within 1-2 hrs.

This version of Spanish paprika has only a very mild amount of heat, with a slightly sweet and slightly smoky flavor. It is a deep red color with flecks of yellow and has a smooth, fine granular texture.
