French Toast with Spiced Apple Compote

The perfect breakfast or brunch for when that cool Fall weather starts to roll in. A nutmeg and cinnamon spiced apple compote will make your kitchen smell heavenly!

SPECIAL EQUIPMENT:
GRIDDLE
- Start by making the apple compote: to a medium pot add the diced apples, lemon juice, brown sugar, nutmeg and cinnamon. Stir to combine.
- Cook over medium heat, stirring occasionally, until the apples release their juices. Cook 15 minutes more, adding a tablespoon of water if the mixture becomes too dry. While the liquid thickens, start on the French toast.
- Preheat your griddle to medium heat or preheat a nonstick pan over medium heat on the stove.
- In a small bowl combine the eggs, vanilla, nutmeg, cinnamon and whole milk. Whisk until completely combined. Transfer to a shallow dish.
- Dip the pieces of bread, one at a time, into the egg mixture ensuring it’s coated on both sides. Cook on the griddle or nonstick pan until heated through and lightly browned on both sides.
- Transfer to a plate, top with a heaping spoonful of the apple compote and powdered sugar or syrup if desired. Serve immediately.
French toast should be enjoyed right away. The apple compote can be stored in an airtight container in the refrigerator for up to five days.
For best results, use tart apples with firmer inside. I used a mix of Granny Smith and Pink Lady.
Use thick sliced, study bread like Texas toast or challah.
