a little bit about the recipe
Nothing says “the holiday season” like a little fresh nutmeg grated on top of your drink. Add in winter citrus in the form of grapefruit and some rosemary, and you have a festive garnish that works for all the end-of-year holidays.

2 oz. London Dry gin
1 oz. fresh grapefruit juice
3/4 oz. rosemary simple syrup*

  • Combine 2 ounces gin, 1 ounce grapefruit juice, 3/4 ounce rosemary simple syrup, and 1 egg white in a cocktail shaker without ice. Shake hard for about 30 seconds ("dry shake"). Add ice and shake again for about 30 seconds ("wet shake"). Strain into a chilled coupe.

  • Slice a grapefruit wheel in half. Sprinkle it with granulated sugar and brûlée using a kitchen torch. Gently place brûléed grapefruit on top of drink, add a sprig of fresh rosemary, and grate fresh nutmeg on top of the grapefruit and the foam.

  • *To make rosemary simple syrup, combine 1/2 cup granulated sugar, and 1/2 cup boiling water in a heatproof vessel (like a Pyrex measuring cup). Stir until the sugar dissolves, add two fresh rosemary sprigs, and let cool to room temperature. Remove the rosemary sprigs (strain through a cheesecloth-lined funnel if there are bits of rosemary in there) and store syrup in a glass bottle in the refrigerator for up to 3 weeks.
    tips
    Always promptly remove the shaker cap after shaking an egg white cocktail (both during the dry shake and the wet shake). The pressure created by the foam can cause the shaker to explode.

    This cocktail is equally good with blanco tequila, so feel free to use whichever spirit you like better.
