Kerala Chicken puffs is a savory, buttery and flaky puff pastry that has a spicy Chicken filling flavored with aromatic blend of Kerala spices. It is a very popular Kerala snack, that is usually served with tea.

- In a non-stick pan add all the ingredients listed under 'For the chicken' and mix well; cover and cook till the chicken is well done. Remove from pan and let it cool. Shred the chicken in a food processor.
- In the same pan, heat 2 tbsp. of oil and sauté onions, ginger, garlic and green chili till the onions are light golden brown. Add the turmeric powder, chili powder, and the shredded chicken. Mix well and cook till the raw smell of the chili powder is gone. Add the black pepper powder and Kerala Masala and salt to taste. Cook for a minute. Add the curry leaves and cilantro and turn off the flame.
- Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
- Cut each puff pastry sheet into 9 equal squares of 3"x3" size. Take 1 tbsp. of the chicken filling and fill one side of each piece and fold it diagonally to form a triangle. Press the edges to seal well. Arrange them on the baking sheets with 9 on each baking tray. Brush the top of the chicken filled puffs with egg wash. Bake for 15 - 17 minutes. Similarly prepare the last batch of 9 chicken puffs.
- Enjoy the Kerala Spicy Chicken puffs with a cup of ginger Chai/Tea.
The left overs can be kept in a air tight container in the refrigerator for 2-3 days.
The Kerala Chicken puffs can be reheated in a toaster oven/conventional oven/Air fryer at 350°F for 5-6 minutes.
