- Bring the apple cider and Selefina Spices Mulling Spice Mix to a boil over medium-high heat. Reduce the heat and simmer 20 minutes or until reduced to about 1⁄2 cup. Remove from the heat. Let cool 5-10 minutes. Strain out the spice mix. Add the cider to a large mixing bowl.
- In the cooled cider, whisk together the apple butter, yogurt, vanilla extract.
- In a separate bowl, beat together the eggs and light and brown sugar.
- In another bowl, combine the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
- Alternate adding portions of the dry ingredients to the wet ingredients, mixing well after each addition. Continue alternating until all ingredients are combined.
- Bring the dough to a lightly floured surface and roll it out into a 1/3-inch thick rectangle. Place the rectangle in the freezer for 10 minutes to firm up.
- In a shallow bowl, combine the sugar and 1 tablespoon cinnamon.
- Heat 2 inches of oil in a deep fryer or large pot to 350°F.
- Remove the dough from the freezer and cut out doughnut shapes. Carefully lower the doughnuts into the hot oil and fry until golden brown and puffed, about 1-2 minutes per side. Drain on a wire rack to cool.
- While still warm, generously coat the doughnuts in the cinnamon sugar mixture. Serve
