This cocktail takes its cues from Mexican cuisine, with a rich, spicy, smoky flavor. Guajillo-infused tequila provides spice and an undertone of smoke. Mezcal builds on the smoke. Mole bitters add umami, and crème de cacao ties together the flavors with a hint of sweetness. Perfect for Taco Tuesday or paired with chicken in mole sauce.

To infuse a greater quantity of tequila, use an additional dried guajillo for every four ounces of tequila. Taste the tequila throughout the infusion until it is as spicy as you want it to be.
If you don't have coupe glasses, a small wine glass or other stemmed glass will do.
