Instructions:- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan. Line the bottom with parchment paper for easy removal.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg slowly, then stir in the vanilla.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, star anise and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the pumpkin puree.
- Using a large cookie scoop, drop rounded mounds of dough onto the baking sheet, leaving about 2 inches between each.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Make the cream cheese frosting:- In a large bowl, cream together the butter and cream cheese until light and fluffy.
- Gradually add the powdered sugar, one cup at a time, beating until smooth.
- Stir in the vanilla extract.
Frost the cookies:- Once the cookies are completely cooled, transfer the cream cheese frosting to a piping bag. Pipe the frosting in swirls to decorate the cookies.
- Once the frosting is finished, lightly dust with soft cinnamon.
To maintain freshness, store these cookies in an airtight container in the refrigerator for up to 7 days. Due to the cream cheese frosting, it's best to avoid leaving them at room temperature. For those who prefer room temperature treats, enjoy the unfrosted cookies in an airtight container. When ready to serve, frost them for the final touch.
