These irresistible pumpkin spice candied cashews are our favorite fall treat! Featuring a thin, crispy coating and a blend of cozy spices, these candied nuts strike the perfect balance between sweet and savory.

directions

  • Preheat your oven to 325°F and line a baking sheet with parchment paper.

  • In a medium bowl, whisk together the brown sugar, pumpkin pie spice, cayenne (if using), vanilla extract and salt. Set aside.

  • In a separate bowl, use a hand mixer to beat the egg white and 1 tablespoon water until frothy.

  • Fold the cashews into the egg white mixture until the cashews are evenly coated. Transfer the mixture to a colander and allow the excess liquid to drain for 5 minutes.

  • Add the drained cashews to the pumpkin spice mixture and toss to coat. Keep mixing until the cashews are evenly coated and the spice mixture becomes syrup-like in consistency.

  • Spread the coated cashews in a single layer on the prepared baking sheet.

  • Bake in the preheated oven for 25-30 minutes or until the cashews are golden and crispy. Keep an eye on them to prevent burning.

Candied cashews can be stored in an airtight container at room temperature for up to 1 week.
tips
Adjust Sweetness and Heat: If you prefer a sweeter snack, you can increase the amount of brown sugar slightly. And if you want just a bit of heat, I recommend 1/8 teaspoon cayenne.
