This is a copycat version of the creamy creation that landed on Starbuck’s menu in 2019 as the latest addition to their lineup of pumpkin spice offerings after the runaway success of their PSL. If you love cold brew coffee and pumpkin spice, this is the fall-themed beverage for you!

SPECIAL EQUIPMENT:
MILK FROTHER*
Make pumpkin spice: Lightly whisk together spice ingredients, reserve a small amount of the pumpkin spice for garnish.
Make pumpkin foam: Combine the milk, pumpkin puree, maple syrup, vanilla, pumpkin spice and salt in a small saucepan and heat over low to medium heat, stirring often to dissolve sugar and prevent boiling. Turn off the heat as soon as the mixture begins to steam. Pour the mixture into a tempered glass and place in the refrigerator for 15 minutes. Transfer the chilled milk mixture to a milk frother and froth.
Make drink: Pour the cold brew coffee (or iced coffee) into a glass; add ice. Drizzle pumpkin foam into the coffee and garnish with pumpkin pie spice.
You can use unsweetened almond or oat milk in place of regular milk.
*If you don’t have a milk frother, use a blender set to the highest speed instead.
