a little bit about the recipe
The Pumpkin Spice Irish Coffee: It’s everything you love about the original Irish Coffee, but with delightful fall baking spices. This recipe doubles down on the pumpkin pie spices, using them to make a flavorful syrup and also sprinkling them on top of a generous pillow of whipped cream.

  • To make pumpkin spice syrup, combine 1/2 cup water, 1/2 cup granulated sugar, and 2 teaspoons Selefina Pumpkin Pie Spice Blend in a small saucepan. Heat over medium low, stirring often, until sugar completely dissolves and spice powder mostly dissolves. (This could take up to 30 minutes.)

  • Remove from heat. Place a funnel lined with a coffee filter over a glass bottle. Pour contents of saucepan into coffee filter and allow to drip through, filtering out any remaining spice powder. (This could take several hours, so plan ahead.)

  • To make the cocktail, heat a glass or mug with a handle by filling it with hot water. Discard water after about 30 seconds, then add 1 1/2 ounces Irish whiskey and 3/4 ounce pumpkin spice syrup. Fill glass with hot coffee. Stir. Top with whipped cream. Garnish with pumpkin spice sprinkled on top.

Syrup can be stored in the refrigerator for about 3 weeks.
tips
The syrup is also good mixed with regular coffee or hot chocolate, drizzled over ice cream or yogurt, or used in place of simple syrup in cold cocktails.
