1 cup dry red lentils, rinsed
1 tsp curry powder
1 tsp fenugreek powder
1 tsp turmeric powder

1 tsp salt
1 can (13.5 oz) full-fat coconut milk
1 can (14.5 oz) can diced tomatoes
2 cups vegetable broth
½ lemon, juiced
2 cups spinach, chopped

This Red Lentil Curry is an easy, nourishing vegan 30-minute dinner recipe for the whole family! It features Fenugreek Powder for digestion, Turmeric Powder for anti-inflammatory support, and Ground Ginger Powder for a warming, immune-boosting touch.

  • In a large pot, add coconut oil and onion, sautéing for 2 minutes.

  • Add the garlic and lentils. Stir the lentils so they become coated with oil.

  • Next, add curry powder, fenugreek powder, turmeric powder, ginger powder, and salt and stir to combine.

  • Add coconut milk, diced tomatoes, vegetable broth, and lemon juice and stir well.

  • Cover, bring to a boil, and then turn down heat to let simmer for approximately 15 minutes, until lentils are soft.

  • Turn heat off. Add spinach, stirring to combine. Serve red lentil curry over rice or with naan.
