This Red Lentil Curry is an easy, nourishing vegan 30-minute dinner recipe for the whole family! It features Fenugreek Powder for digestion, Turmeric Powder for anti-inflammatory support, and Ground Ginger Powder for a warming, immune-boosting touch.

- In a large pot, add coconut oil and onion, sautéing for 2 minutes.
- Add the garlic and lentils. Stir the lentils so they become coated with oil.
- Next, add curry powder, fenugreek powder, turmeric powder, ginger powder, and salt and stir to combine.
- Add coconut milk, diced tomatoes, vegetable broth, and lemon juice and stir well.
- Cover, bring to a boil, and then turn down heat to let simmer for approximately 15 minutes, until lentils are soft.
- Turn heat off. Add spinach, stirring to combine. Serve red lentil curry over rice or with naan.
