a little bit about the recipe
Perfect for Summer grilling season, these chicken kabobs get their incredible flavor from a citrus marinade. Serve over rice, couscous or even a salad!

  • Make the marinade by combining the olive oil, lemon juice, orange juice, garlic, Sicilian Citrus Italian Seasoning, salt and pepper in a small bowl.

  • Cut the chicken breasts into 1 inch pieces. Add them to a ziptop bag along with the prepared marinade. Seal the bag and toss to coat all the chicken. Refrigerate for 2-3 hours.

  • Preheat the grill to medium-high heat. If you are using wooden skewers be sure to soak them in water for 30 minutes before grilling.

  • Cut the onion and pepper into 1 inch pieces and slice the squash into ½ inch thick rounds. Thread the skewers, alternating the chicken and vegetables.

  • Grill for 10-15 minutes, rotating the kabob occasionally. Chicken is done when the internal temperature reaches 165°F. Serve immediately over rice, couscous or salad.

Store leftovers in the refrigerator for up to three days.
tips
If you’re in a rush, you can marinade the chicken for just 30 minutes and it will still have a great flavor!

If you don't have a grill these can be made on a sheet pan in the oven at 450°F for 25 minutes.
