Small Batch Herb Knots

The perfect accompaniment for any meal, these small batch herb knots are full of flavor and slathered with butter! The herb knots have Rustic Dipping Spice both in the dough and on top of the finished roll for maximum flavor.

| 1 Herb Knot
- In a medium bowl, combine flour, 1 teaspoon Rustic Dipping Spice, sugar, salt and yeast. Whisk gently to combine. Add the water and 1 tablespoon of the olive oil. Mix until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead until the dough comes together into a smooth ball, about 8 minutes. If the dough seems overly sticky, add flour, one tablespoon at a time until it comes together.
- Grease a bowl with the remaining 1 teaspoon olive oil and add the dough. Cover with plastic wrap or a towel and allow to rise in a warm area (about 75°F) for 1 hour or until it has doubled in size.
- Turn the dough out onto a lightly floured surface, press out the air and divide it into 8 equal pieces, about 50 grams each. Roll each piece into an 8 inch rope and tie into a knot. Place the knots onto a baking sheet, cover with plastic wrap and allow to rise for 30 minutes.
- Preheat your oven to 400°F. After the knots have risen for 30 minutes, bake them for 15-17 minutes or until golden brown. Directly out of the oven, brush the knots with melted butter and sprinkle with the remaining 1 teaspoon Rustic Dipping Spice.

The herb knots are best enjoyed the same day, but can be stored in an airtight container on the counter for a day or frozen for a month.
A Savory Blend

Modeled after my favorite pastimes, baking and eating bread, I created a savory blend of my favorite dipping spices. Pair with your favorite olive oil and loaf of crusty, rustic bread. The blend has the usual spices you’d pair with bread: garlic, oregano and thyme. But also a few unexpected additions. Marjoram for a hint of sweetness and mild crushed red pepper for a little heat. A pinch of flaky sea salt really rounds out the blend, but isn’t so overpowering so you’re still free to adjust the salt on your own. Rustic Dipping Spice is colorful and has larger pieces of the included spices; it’s meant to be an addition to your dish that you can see to enjoy. Start by adding one teaspoon per ¼ cup olive oil and adjust up from there for a more intense flavor. Consider infusing the Rustic Dipping Spice in your oil for an extra burst of flavor.
The Rustic Dipping Spice is also a fabulous addition to bread or pizza dough. Add it with the flour and it gives a wonderful rich flavor to your baked goods. You can also sprinkle the blend on unbaked bread as a topping. And in a pinch, the Rustic Dipping Spice pairs well with roasted vegetables or proteins as it lends itself to being very versatile in your kitchen! Note that additional salt and pepper will need to be added when using it for vegetables or proteins.
