Risa Weaver-Enion is a professional photographer based in Sacramento, California. Through her company Risa James Photography, she specializes in food and beverage photography, specifically cocktails. She works with small distilleries, wineries, and purveyors of cocktail accessories to create beautiful imagery for them to use in their marketing efforts. Her book, Cocktails for Everyday Drinking, was published in 2022 and is available at all online booksellers.
When she’s not photographing cocktails, Risa and her husband love to travel, both within the United States and internationally. Many of their trips have been wine-focused, but they’ve visited their fair share of distilleries around the world as well.

a little bit about the recipe
A Bee's Knees is a classic 1920s gin cocktail recipe that uses mild honey. Using Adagio Bees's chipotle honey instead kicks the spice WAY up and gives the drink a whole new dimension.

  • To make the honey syrup, combine equal amounts of honey and hot water in a glass jar or bottle. Shake well to incorporate the honey. Let cool to room temperature before using.

  • Combine 2 oz. Navy Strength gin, 3/4 oz. fresh lemon juice, and 1/2 oz. honey syrup in a cocktail shaker. Add ice and shake for about 20 seconds. Double-strain into a chilled coupe. Garnish with a lemon twist.

Consume cocktail immediately; honey syrup can be refrigerated for about a week.
tips
Navy Strength gin is higher in alcohol content than regular gin. The chipotle honey is very spicy, so the higher proof gin stands up better to the spice.

The reason you combine the honey with hot water instead of using the honey on its own is that it will congeal in the cocktail shaker when you add ice, and most of it will be left behind instead of ending up in your drink.
