- The first step is optional, but really takes this drink to the next level - grill your pineapple slices! This can be done over a grill or with a cast iron grill/griddle.
- Add the grilled pineapple to a shaker glass along with the jalapeños and tequila. Muddle together, then add the gran gala, lime juice, and cream of coconut. Shake vigorously to combine.
- Brush your glass with some simple syrup and rim it with the Pineapple al Pastor spice blend. Add ice, then pour your spicy margarita into the glass.
- Garnish with pineapple leaves, an additional grilled pineapple or jalapeño slices, and enjoy!
