2 tbsp olive oil
2 stalks celery, finely chopped
½ bulb fennel, finely chopped
2 cloves garlic, minced

6 oz baby bella mushrooms, chopped
1 cup white rice
⅓ cup white wine
2 cups chicken broth
1 cup parmesan cheese

A classic Italian side dish for Thanksgiving. Italian Rice Stuffing is a staple on the Italian-American Thanksgiving table and is perfect for stuffing the Turkey or serving as a side!

  • Bring a large saucepan to medium-high heat. Add 1 tablespoon of olive oil. Remove the sausage from the casing and place it in the pan. Sear untouched for 2-3 minutes. Then use a wooden spoon to break apart the sausage. Cook until browned through. Use a slotted spoon to remove the sausage and set it aside in a bowl.

  • Lower the heat to medium. Add the butter to the pan. Add the chopped celery and fennel. Sauté for about 8 minutes, stirring occasionally. Season with salt, pepper, and Sweet Italian Sausage seasoning. Add the garlic and mushrooms and saute for 5 more minutes, stirring occasionally.

  • Add the rice to the saucepan. Toast for about 2 minutes, stirring and combining with the other ingredients. Add the white wine to deglaze the pan. Stir until it is completely absorbed. Add the chicken broth and bring to a boil. Lower the heat to low. Cover and simmer for 15 minutes.

  • Preheat the oven to 375℉. When the rice is finished, add it to the bowl with the sausage and combine with 1 cup of Parmesan cheese.

  • Oil the baking dish with 1 tbsp of olive oil. Add the stuffing to the dish and bake it in the oven for 25 minutes. Remove and serve.

tips
Sear the sausage until it develops a crust. This will give the sausage a richer flavor and flavor the rice and vegetables.

Use white rice for the best results. It absorbs liquid better than brown rice or wild rice and will still be creamy after baking.
