A delicious lasagna soup made with homemade marinara, sweet Italian sausage, and ricotta! An easy soup in under an hour that the whole family will enjoy.

SPECIAL EQUIPMENT:
LARGE DUTCH OVEN
- Place a dutch oven over medium-high heat. Add the ground beef and the ground pork to pot and sear well for 2 minutes. Season with 1/2 tsp salt and 1 tbsp sweet Italian sausage seasoning. Use a wooden spoon to break apart the meat and stir until browned. Strain the meat and set aside.
- Remove any liquid from the pot and lower the heat to medium heat. Add olive oil to the pan. Saute the onions over medium heat until softened, about 8 minutes. Stir in the garlic for 2 minutes and season with 1/2 tsp salt.
- Pour in the marinara sauce and bring to a low simmer. Add the meat back to the sauce and pour in the broth.
- Mix well and bring the soup to a simmer. Add the parmesan rind and simmer for 20 minutes. While the soup is simmering, break up the lasagna. Add it to the soup and simmer for another 15 minutes. Remove from the heat and stir in the fresh basil.
- Serve in a bowl with fresh ricotta, parsley, and parmesan.

Make sure to really break up the lasagna so you don't have huge pieces in the soup. You want it to be 2 inch pieces, max.
Adding the fresh basil at the end will give the soup an extra burst of fresh flavor and really make it feel like lasagna in a bowl.
