Whisky Ginger Smash

FOR THE SIMPLE SYRUP
3 oz fresh ginger, sliced thin
1 tbsp lemon peel (dried), chopped
½ cup sugar
⅔ cup water
FOR THE COCKTAIL
1 piece fresh ginger, peeled (approx 1/2 oz)
2 mint leaves (fresh), plus more for garnish
1½ oz whisky
½ oz orange liqueur
½ oz lemon juice
¾ oz pineapple juice
¾ oz ginger simple syrup
splash club soda
2 pieces crystallized ginger, sliced, for garnish

a little bit about the recipe
Whiskey and ginger are a match made in heaven! This cocktail starts with a quick ginger simple syrup, then fresh mint is muddled with more ginger root for an extra zingy ginger flavor.

directions
make the ginger simple syrup:
Place all ingredients in a small pot and place over medium heat, stirring occasionally until the sugar is melted and it starts to bubble. Reduce the heat to low, cover with a lid, and simmer for about 15 minutes. Remove from heat and let cool completely (about 30 minutes). Strain after cooling.

make the cocktail:
Muddle fresh ginger and mint in a cocktail shaker. Add whiskey, orange liqueur, lemon juice, pineapple juice, and ginger syrup, then fill with ice, and shake to combine.

Strain into a rocks glass filled with ice and add a splash of club soda. Garnish with fresh mint leaves and crystallized ginger.
