Introducing my Cacao-Maple Mélange, a spice blend born from the crossroads of my Swiss heritage and Canadian home. Inspired by the breathtaking Swiss Alps and the maple-laden landscapes of Canada, Cacao-Maple Mélange is a celebration of two distinct cultures united in a single spice blend. The visual allure of the mix is its rich chocolatey hue that is intertwined with hints of warm cinnamon and golden maple.
The aroma of this blend is where the magic lies. It is warm and cozy and will transport you to a chalet nestled in the mountains. The sweet embrace of maple mingles with the warm spiciness of cloves and cinnamon, creating an aromatic journey that captivates the senses. When tasted, the blend unfolds like a story – the deep, robust cacao notes balance harmoniously with the sweet warmth of maple sugar and cinnamon, while the subtle and delicate citrusy zing of orange and cardamom adds a refreshing twist.
This unique combination of flavors reflects the culinary tastes of both of my worlds. Cacao-Maple Mélange is versatile, elevating both sweet and savory dishes. Sprinkle it over your morning pancakes, stir it into hot chocolate, or use it as a secret ingredient in savory stews and roasts. The taste evolves with heat and time, intensifying its complexity as it cooks. Add it early for a gradual infusion or later for a burst of bold flavor.
Crafted with love and a nod to my roots, Cacao-Maple Mélange is more than a spice blend; it's a culinary journey through the mountains and forests, a fusion of cultures that transforms every dish into a celebration.
Uses:
In sweet treats: Add to your brownie or cookie batter for a hint of chocolate and spice.
In hot beverages: Stir it into hot cocoa, coffee, or even a chai tea for a Swiss-Canadian twist.
On desserts: Dust it over ice cream, yogurt, or chocolate mousse for a delightful garnish.
In savory dishes: Sprinkle it on roasted meats like pork or chicken or add it to your stews for a unique and exotic flavor.
Modeled after my favorite pastimes, baking and eating bread, I created a savory blend of my favorite dipping spices. Pair with your favorite olive oil and loaf of crusty, rustic bread. The blend has the usual spices you’d pair with bread: garlic, oregano and thyme. But also a few unexpected additions. Marjoram for a hint of sweetness and mild crushed red pepper for a little heat. A pinch of flaky sea salt really rounds out the blend, but isn’t so overpowering so you’re still free to adjust the salt on your own. Rustic Dipping Spice is colorful and has larger pieces of the included spices; it’s meant to be an addition to your dish that you can see to enjoy. Start by adding one teaspoon per ¼ cup olive oil and adjust up from there for a more intense flavor. Consider infusing the Rustic Dipping Spice in your oil for an extra burst of flavor.
The Rustic Dipping Spice is also a fabulous addition to bread or pizza dough. Add it with the flour and it gives a wonderful rich flavor to your baked goods. You can also sprinkle the blend on unbaked bread as a topping. And in a pinch, the Rustic Dipping Spice pairs well with roasted vegetables or proteins as it lends itself to being very versatile in your kitchen! Note that additional salt and pepper will need to be added when using it for vegetables or proteins.
When creating this spice blend, I was inspired by my childhood growing up in a West Indian household, which is why it’s named Harvest Spice; for the cozy feeling of home and nostalgia the aroma of this blend invokes. The spices I used for this blend were all part of the dishes we enjoyed, especially during the holidays when the sweet scent of cinnamon, warm clove, citrusy cardamom, aromatic nutmeg, and peppery allspice permeated the air. I wanted this blend to pull double duty in the kitchen, so I added earthy coriander and the subdued bite of white pepper to bridge the gap between sweet and savory.
This incredibly versatile spice blend has limitless uses:
Breakfast recipes such as French toast or baked oatmeal
Baked goods such as pies, cakes, and cookies
Meat and poultry dishes, like Moroccan-inspired stews
Tips:
Add Harvest Spice to dry ingredients for sweet treats, then follow the recipe as instructed.
When preparing your savory dishes, add the spices after the aromatics have softened and sautee briefly to avoid burning. This method allows the flavors to bloom and be efficiently distributed throughout the dish.
This Cinnasational Spice Blend is an all purpose baking blend that can be added to any baked good! Cinnamon is the star of the show but nutmeg, allspice and cloves pack their own punch creating a well rounded spice mix. From cinnamon rolls to cobbler, this blend is the perfect addition to any and every baking recipe!

Tips:
Whisk this blend in with the flour and other dry ingredients when adding it to a recipe so it is evenly distributed.
To make a spiced simple syrup, mix it in with the sugar before adding the water so it does not separate.
