- Make the cranberry jam. In a medium saucepan, combine the cranberries, orange juice, sugar, cinnamon, ginger, cloves, orange peel, and salt. Bring to a simmer over medium heat, stirring occasionally. Cook for 10–15 minutes, until the cranberries burst and the mixture thickens and becomes jammy. Taste and adjust sweetness with more sugar if needed. Let cool to room temperature before using (jam will thicken further as it cools).
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Using a sharp knife, carefully cut off the top rind of the brie (leave the sides and bottom intact). Set aside.
- On a lightly floured surface, roll out the puff pastry with a rolling pin until it's slightly larger than its original size. This will make folding easier.
- Place the brie rind-side down in the center of the pastry. Spread a heaping 1/4 cup cranberry jam over the brie, then sprinkle with toasted pecans (reserve extra jam for serving).
- Lift the edges of the pastry over the brie, making small, even folds to encase it. Press lightly to seal. Gather excess pastry at the top, twist into a knot, or trim for a neat finish.
- Transfer to the prepared baking sheet. Brush pastry with beaten egg.
- Bake for 25–30 minutes, until deep golden brown.
- Let cool 5–10 minutes before slicing. Serve warm with crackers and crostini.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
The tartness of cranberries can vary. Make sure to adjust sugar to taste.
This recipe makes more jam than needed to top the brie. I like to serve the extra jam in a small dish alongside the baked brie.
