Corn on the cob has always been one of those foods that doesn't need much, but I love finding little ways to make it feel special. This creamy citrus-adobo topping was inspired by Mexican street corn, but with its own personality: bright, tangy, savory, and finished with a generous shower of Cotija for the perfect bite.

  • Fill a large pot with water, season generously with salt, and bring to a boil. Add the corn and cook until tender, 12 to 15 minutes. Drain well.

  • Meanwhile, in a small bowl, stir together the mayonnaise, Mercado Citrus Adobo seasoning, and lime juice until smooth and evenly combined.

  • While the corn is still warm, generously brush butter and the Mercado Citrus Adobo mayonnaise over each ear, coating all sides. Sprinkle with the crumbled Cotija cheese and serve immediately with lime wedges, if desired.

Store any leftover corn in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or enjoy cold. For the best texture, store the Mercado Citrus Adobo mayonnaise separately, if possible, and brush it onto the corn just before serving.
tips
Serve while warm. The warm corn helps the creamy spread melt slightly, making it easier to coat every bite.

Don't skip salting the water. It lightly seasons the corn from the inside out and enhances its natural sweetness.
