1 cup all-purpose flour (120g)
½ cup almond flour (60g)
1½ tsp baking powder (6g)

2 tbsp honey (40g)
⅓ cup neutral oil (70g)
½ cup butter, melted and cooled slightly (113g)
FOR THE PINK SHELL
2½ cups white chocolate chips (240g)
2 tbsp neutral oil (10g)
3 tbsp +1 tsp cranberry juice powder (40g)

These tulip petal madeleines, inspired by the joyful beauty of tulips in bloom, capture the feeling of early spring—bringing together a classic, buttery crumb with a delicate hint of almond, finished with a bright, pink, fruit-kissed shell.

    Prepare the dough:
  • Whisk together the granulated sugar and eggs in a large bowl until combined. Whisk in the milk until smooth.

  • In a separate bowl, sift together the flours, baking powder, salt. Gently fold the dry ingredients into the wet ingredients just until incorporated.

  • Add the honey, neutral oil, and melted butter, stirring until the batter is smooth and fully emulsified. Cover and refrigerate the batter for at least 30 minutes.


  • Bake the madeleines:
  • Preheat the oven to 375°F (190°C) then generously butter a madeleine pan and dust with sifted flour, tapping out any excess. Pipe or scoop the chilled batter into the prepared molds, filling each about two-thirds full. Place the filled pan in the freezer for 5 minutes.

  • Bake the madeleines at 375°F for 6 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for 5–6 minutes more, until the madeleines are puffed, lightly golden around the edges, and spring back when gently pressed.


  • Cool:
  • Remove from the oven, release from the pan, and let cool completely before applying the shell.


  • Make the shell:
  • Melt together white chocolate chips with neutral oil, using a bain-marie or microwaving in 20–30 second intervals, stirring until smooth.

  • Sift in cranberry juice powder and stir until the color is evenly incorporated.

  • Spoon or pipe the chocolate into clean madeleine molds, then gently press a madeleine into each.

  • Place the filled pan in the freezer for 15 minutes, then release the madeleines from the molds.


  • Enjoy!

Madeleines are best enjoyed the day they are baked, when the edges are lightly crisp and the centers are soft and tender. Store plain or iced madeleines in an airtight container at room temperature for up to 2 days. If your kitchen runs warm, refrigerate after the first day and bring to room temperature before serving. Madeleines can be frozen for up to 1 month. Thaw at room temperature just before serving for the best texture and flavor.

Allowing the batter to rest gives the flour time to fully hydrate, resulting in a more tender crumb and deeper flavor. 30 minutes is favorable, overnight yields even better results.

A brief chill in the freezer before baking helps encourage the signature madeleine rise and defined shape.

When baking, look for visual cues rather than relying solely on time—the madeleines should be gently puffed, lightly golden at the edges, and spring back when touched.
