SPECIAL EQUIPMENT:
1 CAST IRON PAN OR SAUCEPAN
directions

  • Combine beef, breadcrumbs, eggs, milk, 2 tsp salt, garlic powder, sweet Italian sausage seasoning, and parmesan cheese in a large bowl. Mix until completely combined.

  • Roll out the meatballs. Usually, I get 10 meatballs per pound of meat.

  • Add 1/4 cup of olive oil to the pan over medium-high heat. Add the meatballs in being careful not to overcrowd the pan. Sear each side of the meatball for 1 minute, then set them aside on a paper towel-lined plate.

  • Remove the oil from the pan leaving behind at least 2-3 tbsp. Lower the heat to medium. Add the sliced garlic and saute for 1 minute. Pour in the crushed tomatoes and add a tsp of salt. Bring to a simmer and return the meatballs to the pan.

  • Simmer the meatballs for 1 hour stirring occasionally. Serve with pasta and extra parmesan cheese!

tips
Don't overmix the meatballs. The more you work the meat the more dense the meatballs will be. You want them to soft and light.

Sear the meatballs until browned on the outside. Turn with tongs to get each side browned. This process is what gives the meatballs the most flavor.

Premium garlic powder is more pungent in flavor and lighter in color. It is also more soluble due to the removal of the skins before milling.
