Maple Old-Fashioned

• Pour a small pile of maple sugar powder onto a small plate. Use a cut lemon wedge to wet the rim of a rocks glass. Dip the rim into the maple sugar powder. Set aside.


• Combine 2 ounces Japanese whisky, 1 teaspoon maple sugar powder, and 2 dashes cardamom bitters in a mixing glass or cocktail shaker. Stir to dissolve the sugar. Add ice and stir for about 15 seconds. Strain into prepared glass over a large ice cube.

Fee Brothers, Scrappy's and Bitter Housewife all make cardamom bitters. They're available at well-stocked liquor stores or online.

If you prefer to make a maple sugar syrup, combine equal amounts of hot water and maple sugar powder in a Pyrex measuring cup. Stir to dissolve the sugar, then let cool before using. Store in a glass bottle in the refrigerator for up to three weeks.
