These luxuriously smooth chocolate truffles are infused with a cinnamon and clove-spiced red wine reduction. They're perfect for a decadent treat and also make an elegant gift!

- In a small saucepan, combine the red wine, brown sugar, cloves and cinnamon stick. Simmer over medium heat until the liquid reduces to 1/4 cup, about 15 minutes. Remove and discard the cloves and cinnamon, then set the mixture aside to cool to room temperature.
- Place the chopped chocolate in a heatproof bowl.
- In another small saucepan, gently heat the cream over medium heat until it just starts to simmer. Pour the hot cream over the chocolate, cover, and let it sit for 2 minutes.
- Stir until the chocolate is fully melted and smooth. Add the room-temperature butter and the red wine reduction. Whisk vigorously until everything is well combined and smooth.
- Cover the bowl and refrigerate for 1 hour, or until the ganache is firm enough to scoop. If it hardens too much, let it sit at room temperature for 30 minutes before forming.
- Scoop tablespoon-sized portions of the ganache and roll them into balls with your hands.
- Roll each truffle in cocoa powder until evenly coated. Store in the refrigerator until ready to serve. Allow the truffles to come to room temperature before enjoying.
These truffles can be stored in an airtight container in the refrigerator for up to 2 weeks.
To prevent the ganache from melting, keep your hands cool by running them under cold water and drying them before rolling.
