One Pot Lemon Garlic Shrimp + Orzo

with Chicken Love Spice Blend

1 lb pre-cooked frozen wild caught shrimp
2 cups orzo, uncooked
1 lemon, zest and juice of
2 cups chicken broth
2-3 cloves garlic
3 tbsp olive oil
2 tbsp Chicken Love
pinch pink salt to taste
½ cup fresh parsley, chopped
1 cup parmigiana cheese, shredded

I was born in Kingston Jamaica but grew up just east of Toronto, referred from this point on as The Six (paying homage to the once one-and-only area code of the city 416). My whole life I have spent in this city. My father drove the subway for 35 years and out of all my parents friends and family we were the only ones who didn’t live in Toronto. Dated boys, had best friends, went to University, night clubs shopping, eating, concerts all in this city. So it’s been quite a love affair. And all these years, I feel like it’s always been me somehow going west, from east of The Six.

Now I have lots of passions. My family. Cooking. Music. Books. Movies. Basketball. Laughter. All of which were birthed out of what I would consider a lonely childhood, but happy nonetheless. No tears to shed. Certainly possible to have both as I did. But that’s a story for another day.

I started this cooking as an escape during my maternity leave and later during the many lockdowns. As I documented my adventures in the kitchen on Instagram, it began to turn into so much more. A community. A creative outlet. Source of inspiration. Friendships.  A new passion.  And down the rabbit hole I go.

Now I know that this spice blend is called "Chicken Love" but the thing is, the depth and diversity of its flavours is too good just for chicken. This citrus chilli spice blend is perfect for seafood too. In fact, other than salt its the only thing that this easy one pot shrimp and orzo dish needs. Making this dish perfect for a quick week day meal.

  • Heat oil, add in zest of one lemon.

  • Add in garlic and lemon juice. Add in Orzo and chicken broth and let simmer 20 minutes.

  • In the meantime, toss pre cooked shrimp in a little olive oil, lemon juice and spice blend. Set aside.

  • Once Orzo is cooked, add in shrimp, stir and let simmer another 5 minutes. Let sit 5 minutes.

  • Garnish with cheese and parsley. Serve immediately.

tips
I used pre cooked shrimp in this recipe BUT raw shrimp would work well. Just saves time to use the pre cooked.

If using using raw shrimp, cook with the garlic and olive oil for a few minutes than add the orzo and chicken broth to simmer for 20 min on low.
