Creamy Sausage Risotto

1½ tbsp Iberian infusion seasoning

A smoky sausage risotto slowly cooked to a creamy, delicious perfection. This easy risotto combines the smoky flavors of paprika with a sweet Italian sausage for a rich and savory bite.

  • Add 1 tbsp of olive oil to a pan over medium heat. Place the ground sausage in the pan with 1 tbsp of sweet Italian sausage seasoning. Use a wooden spoon to break apart the pork. Cook the pork over medium heat until completely browned through, then set aside.

  • Add water to a small pot and bring to a low boil.

  • Add 2 tbsp olive oil to the same pan. Stir in the minced garlic and saute for 1 minute. Pour in the arborio rice and mix well. Add 1 tbsp of tomato paste. Stir for 2-3 minutes to toast. Add the white wine and bring to a simmer. Stir often.

  • Once the white wine is completely absorbed, add the Iberian fusion seasoning and combine well with the rice. Use a ladle to add 1 cup of water at a time to the rice. Only add 1 cup at a time until the water is completely absorbed. Continue this process for 20-25 minutes until the rice is al dente.

  • When the rice reaches the correct texture of soft with a slight snap, remove it from the heat. Stir in the cold butter in small pieces. Once the butter is combined and melted, add in the parmesan and salt slowly to combine with the rice. Add the pork back in, mix well, and serve.

tips
Slowly adding the water and stirring often is the key to not letting the rice stick. It takes 20 minutes of active cooking but it will help you get the perfect texture.

If the risotto is too thick after adding the parmesan and sausage, add another 1/2 cup of the warm water. This will help return the risotto to the creamy but slightly runny texture.

  • CAUTION: Do not burn/scorch - it can become very bitter. Add sugar to the dish for more sweetness and to balance out smokiness.
  • Salt your dishes well: this blend contains no salt, allowing you to add that umami using other ingredients (salt, broth, mushrooms, etc.,). It’s also versatile enough to add to already-salted snacks, like chips, popcorn or olives.
