Tender grilled chicken thighs marinated in an Italian marinade with garlic, lemon, and Italian seasoning. Once skewered, these lemon pepper chicken skewers are juicy and delicious.

  • Cut chicken thighs into 1-inch by 1-inch pieces. Place them in a large bowl and combine with olive oil, lemon juice, garlic, Italian seasoning, salt, pepper, parmesan, and Dijon mustard. Cover and marinate in the fridge for at least 30 minutes and up to 4 hours.

  • Preheat the grill to high. In a small saucepan over medium-low heat, add butter and 1 clove of crushed garlic. Once the garlic is fragrant, remove the pan from the heat.

  • Pack the chicken tightly onto the wooden skewers. You can add as much, or as little, on each skewer as you’d like, as long as they're packed tightly together.

  • Lower the grill to medium heat. Place the chicken skewers on the grill and brush with the garlic-infused butter. Close the grill. Grill for 3-4 minutes on each side. Baste with the butter every time you turn the skewers. Grill for 10-15 minutes or until the internal temperature is between 165-175 degrees F.

  • Remove from the grill and serve!

Skewered chicken thighs can be cooked until they reach 185 degrees F while remaining juicy and tender. It's better to get them closer to 175 so that the fat will render.

Don't marinate overnight or for more than 4 hours. Because lemon is acidic, it will begin to change the texture of the chicken.
