This winter salad balances crisp apples, hearty greens, and bright herbs for a refreshing break from heavier seasonal dishes. Tossed with quick-cooking farro, creamy goat cheese, crystallized ginger, and a fragrant herb vinaigrette, it offers layers of texture and flavor in every bite—complex, satisfying, and anything but ordinary.

For the salad:
- Cook farro according to package instructions, adding 1/2 tsp of sumac and fleur de sel to the water. Place in a bowl and sprinkle 1/4 tsp sumac over the cooked farro and stir. Refrigerate until ready to assemble the salad.
- Rough cut the kale, butter lettuce, frisee, and radicchio. Core the apple and thinly slice or cut into bite-sized pieces. Set aside.
- Place the lettuces into a salad bowl and toss to evenly distribute. Add the farro and apple and lightly toss again.
For the vinaigrette:
- To a medium bowl, add vinegar, mustard, honey, herbs, salt and pepper. Whisk thoroughly to combine. While whisking, slowly drizzle in the olive oil and whisk until emulsified.
- Pour the vinaigrette over the salad and gently toss to coat. Top with crumbled goat cheese and crystallized ginger.
Store well wrapped in the refrigerator for up to 2 days.
Lacinato kale, also known as Tuscan or Dinosaur kale, is a tender variety of kale, so it doesn't need to be massaged like its curlier counterpart. If you only have curly kale, use a bit of the vinaigrette to massage it and break down its fibrous structure.
This recipe is incredibly versatile. If you have trouble finding any of the salad greens, feel free to substitute with what is available to you.
