Stuffed with herbed goat cheese and glazed with ancho-infused maple syrup, these bacon-wrapped dates strike the perfect balance between smoky, creamy, and subtly spicy.

- Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or foil for easy cleanup.
- Arrange bacon slices in a single layer on the baking sheet.
- Cook the bacon for 10 minutes—it should be lightly cooked but still flexible. Remove from the oven and let cool slightly.
- While the bacon cooks, make a lengthwise slit in each date (without cutting all the way through) and remove any remaining pits.
- In a small bowl, mix the softened goat cheese, marjoram, oregano, and garlic powder until well combined.
- Using a spoon or your hands, fill each date with about 1/2-1 teaspoon of the cheese mixture. Press gently to close.
- Cut each bacon slice into 2-3 pieces. Each piece should be long enough to wrap around a date with a slight overlap.
- Wrap one piece of bacon around each stuffed date, stretching slightly to overlap the ends. Secure with a toothpick if needed. Transfer to a baking sheet lined with parchment paper.
- In a small bowl, mix together the maple syrup and ancho chile powder.
- Brush or lightly drizzle the mixture over the bacon-wrapped dates.
- Bake for 8–10 minutes, or until the bacon is crispy and caramelized.
- Garnish with fresh thyme leaves if desired. Serve warm.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in an oven preheated to 350°F for 5-8 minutes.
For best results, use goat cheese in log form (rather than crumbled) for easier mixing and a creamy texture.
Adjust the filling and bacon based on your dates' size -- use more filling per date for larger dates and cut bacon into 2-3 pieces per slice as needed.
